Black winter truffle – Grade A  (Tuber melanosporum)

Fresh truffle – available from the beginning of November through the end of March.

Frozen truffle – available as whole, intact pieces, slices and minced packed in vacuum-sealed bag.

Storage and use

Fresh truffle – should be consumed within 10 days. To best preserve your truffle, wrap it in a paper towel, put in a glass container and set in the refrigerator (temperature +2°/+5°C). Change the paper towel every 2 days.

In the culinary world it is considered to be the King of the black truffles; due to its sweetish aftertaste it also called “sweet black”.

Black winter truffle is excellent for “bruschetta”, omelette, and lends itself well to being grated or sliced row or seared in butter or oil to flavour first and second courses.

The recommended quantity per serving is 15 gr.

Frozen truffle – has a storage life of 16 months at -18°C.

Black Summer Truffle (Tuber aestivum)

Fresh truffle – available from 1 May to 1 August; the variety T. uncinatum is available from 20 September to 31 January.

In the cuisine it is ideal for appetizers, first and second courses.

It lends itself well to being grated in oil for bruschetta and omelettes. It can also be cut into thin slices seared in butter to flavour pasta, fish or meat dishes.

Whitish truffle – “Bianchetto” or “Marzuolo” truffle (Tuber borchii)

It is a spring truffle mainly harvested in the pine forests. It’s strong aroma is reminiscent of garlic and lends itself to being consumed both raw and cooked.

It has an intense garlicky and resinous scent that lends itself to being consumed both raw and cooked.

It is a condiment particularly suited to fresh salads, omelettes, escalopes and can also be cut into slices seared in butter to flavour pasta dishes.

White Truffle – Grade A (Tuber magnatum Pico)

It is the Alba white truffle representing the highest quality among all the truffles available on the market. It lends itself well to being consumed mainly raw to enhance its aroma and characteristic flavour.

It is the flagship of the “Valli del Dolo e Dragone”, the historic area of the Apennine valleys crossed by the two creeks, which produces highest quality truffles.

Sliced directly on the dish it is excellent for flavouring first courses and meat or fish courses.
The recommended quantity per serving is 10 gr.
